Method

  • Set aside about 60 grams of oats, we'll leave these whole for texture. Put the rest of the oats in a food processor, and pulse until they resemble a coarse flour, about 2 minutes. Add in the cinnamon and pulse to combine. Set aside.
  • In a large bowl, mash the banana until smooth. Mash in butter as well.
  • Add the dark chocolate chips, the brown sugar, and the salt to the oat flour mix.
  • Add the dry ingredients to the wet ingredients. Fold until fully combined. It should resemble a very thick dough.
  • Preheat oven to 375 F.
  • Let the mixture rest a bit, to allow the oats to soak up some of the moisture.
  • Shape the dough into little coins, and place them on a baking tray. Bake at 375 F for 12-15 minutes on the first side, until golden brown on the bottom, then flip and bake for another 10-12 minutes.

Notes

  • Toasting the oats seems to work really nicely! Preheat oven to 375 F, toast oats for 20 minutes, let cool for a few minutes, then proceed with the recipe.
  • These come out a little dry, and they don't spread out at all, just retain whatever shape they're in when they get put in the oven, which is why I think they should be called "coins" instead of "cookies".
  • Adding in like 30 grams of nuts or other lil things can be nice too. Pulse them with the oats to make sure the cookies don't get too crumbly.
