Method

  • Preheat oven to 350 ˚F.
  • Prep your loaf pan. Line with parchment paper, and grease the parchment paper.
  • Prepare the flax egg, which is just blending 2 tbsp ground flax with 5 tbsp water. Let sit and become gooey while you prepare things.
  • Melt the butter, set aside
  • Mash bananas until smooth, make sure you have the right amount
  • Combine all wet ingredients. Note that oats and sugar are included in the wet ingredients, this helps soften the oats a bit before cooking.
  • Sift the baking soda, baking powder, salt, and flour together.
  • Add the flour mixture to the wet ingredients. Fold to combine, and try to mix just enough to remove any dry flour chunks. The baking soda leavens the mixture as it's combined, and if you mix it too thoroughly, you'll lose all the air pockets you just created.
  • Spoon into a greased 9 × 5 inch loaf pan. You can also add optional toppings, like nuts or extra big sugar crystals or whatever.
  • Bake for 90 minutes, maybe even longer at 350 ˚F.
