Method

  • saute garlic and onions in olive oil, salt and pepper, brown and caramelize a bit
  • add veggies, cook for a lil bit to get some browning flavour
  • add a bunch of water, bring to a boil and stir to combine for a bit
  • reduce to a simmer, add bay leaves, and simmer for an hour or a few
  • taste, add salt and ground black pepper to taste
  • strain out all the solids
  • freeze, use in other recipes
