Add broth, nutritional yeast, lemon juice, and cashews to a blender container. I used my handheld immersion blender and it worked fine, could do high-powered blender if you want it even smoother, but it does seem way easier to clean an immersion blender. Set aside, you'll be blending things in a bit.
In a medium sized pot, over medium heat, cook garlic in olive oil, until just starting to brown
Add the spinach, cook until just wilted and still bright green, and remove from heat
Add the cooked spinach and garlic to the blender container, scraping to get all the olive oil you cooked with as well.
Blend everything up till smooth and bright green

Tried on 2026-01-15, it's pretty dang good! Ate it with boiled gnocchi, and added some store-bought vegan pesto which was a great addition. I think adding basil to this recipe, and more cashews, could make a lot of sense if you want to skip the added pesto next time. Storing in the fridge for another lil portion tomorrow, will see how it looks.
