Method

  • Peel and grate the potatoes. A food processor can come in handy here.
  • Finely chop the onion.
  • Squeeze out as much moisture as you can from the shredded potatoes and onion.
  • Add the salt, pepper, paprika, and starch. Mix well.
  • Form into round patties
  • To bake - preheat the oven to 350 F. Space out the patties on a baking sheet, and brush or spray with cooking oil. Bake for 20 minutes, flip, and bake for another 20 minutes.
  • To air fry - preheat the air fryer to 350 F, fan on of course. Space the patties out in the air fryer. Bake for 10 minutes, flip, and bake for another 10 minutes.
  • To pan fry - heat oil in a larger fry pan over medium-high heat. Add patties to the pan, and cook for 7 to 10 minutes on each side. Transfer to a plate lined with paper towel to drain excess oil.

Notes

  • Before cooking, you can freeze these. Transfer to a tray, freeze till solid, then transfer to a ziploc bag. Defrost before cooking.
