Peel and grate the potatoes. A food processor can come in handy here.
Finely chop the onion.
Squeeze out as much moisture as you can from the shredded potatoes and onion.
Add the salt, pepper, paprika, and starch. Mix well.
Form into round patties
To bake - preheat the oven to 350 F. Space out the patties on a baking sheet, and brush or spray with cooking oil. Bake for 20 minutes, flip, and bake for another 20 minutes.
To air fry - preheat the air fryer to 350 F, fan on of course. Space the patties out in the air fryer. Bake for 10 minutes, flip, and bake for another 10 minutes.
To pan fry - heat oil in a larger fry pan over medium-high heat. Add patties to the pan, and cook for 7 to 10 minutes on each side. Transfer to a plate lined with paper towel to drain excess oil.
Notes
Before cooking, you can freeze these. Transfer to a tray, freeze till solid, then transfer to a ziploc bag. Defrost before cooking.
